Gluten-free brownies Recipe

After some trail and error (and lots of taste-testing), I’m thrilled to share my own version of black bean, avocado, chia seed brownies! You won’t believe how good these doggone things are!

Plus, you can cut them into serving-sized pieces, wrap and freeze them, then toss one into your bag before you leave the house. Just about the time you’re thinking that you need a snack, your tasty little brownie is thawed and ready to be eaten. Perfetto.

Ingredients:

4 oz unsweetened chocolate (Bakers or similar)
1/4 c olive oil
1/4 c coconut oil
3/4 cup almond flour
15 ounce can black beans
1 Haas avocado (make sure it’s very ripe)
1 Tbsp vanilla extract
1/4 tsp coarse sea salt
2 tablespoons unsweetened cocoa powder (Hershey’s Special Dark or similar)
1/3 cup organic sugar or honey
8 packets Truvia (Stevia)
4 eggs
1 cup warm water
2 Tbsp chia seeds

Gluten Free and Low Carb Challenge

In 2012 I became aware of the problems with gluten on the body. My husband and I set out on our gluten-free journey. We needed to lose weight so we started to research a eating philosophy that includes vegetarian lifestyle. We discovered The Low Carb Vegetarian".

This plan required low carbs, but we still want to stay glute-free. As we read labels of the gluten-free products we were dismayed to find the high carbohydrate flour mixtures.

Now the challenge was to cook gluten-free and low carb. The most difficult part was locating breads and desserts. I love researching and on this expedition the Paleo Diet kept coming up.

Without going into a lot of boating details, both online- this is exactly what we needed!! The Paleo Diet requires zero grain consumption. Breads, crusts etc are made with almond meal, coconut flour, blanched almond flour and flax seed flour. I immediately began trying out the recipes on
www.Paleofast.com.

The conclusion is this:
For people who need to be gluten-free and low carb, there is a way to accomplish this. Diabetics and those of us who need to release pounds, there is hope.

Do some research of your own. Ding stop until you find what works best for you.
