Recipe Makeover:Fluffy Cake Donuts

Glenda's Fluffy Cake Donuts

2 cups blanched almond flour
3/4 c coconut palm sugar
1 tsp baking powder (no aluminum)
1 tsp cinnamon 
1 tsp nutmeg
2 eggs beaten 
2 Tablespoons coconut oil
1 cup Almond or coconut milk
1 tsp vanilla 

Mix all dry ingredients in a bowl. Place all wet ingredients in another bowl. Stir each till ingredients are well blended. Add wet ingredients to the dry. Mix. 

Oil the donut pan with coconut oil. Fill each section withe the batter. Bake for 30 minutes at 350 degrees.

Cooking Time: 30 minutes

Serves:  8 slices (depending on how thinly you cut it )


Ingredients and Cooking Steps

1 1/2 cups blanched almond flour or almond  meal
2 tablespoons coconut flour
1/4 cup golden flaxseed meal
1/4 teaspoon celtic sea salt
1 1/2 teaspoons baking soda
5 eggs
1/4 cup coconut oil
1 tablespoon honey (I use stevia or coconut palm sugar)
1 tablespoon apple cider vinegar
Place almond flour, coconut flour, flax, salt and baking soda in a food processor
Pulse ingredients together
Pulse in eggs, oil, honey and vinegar

Pour batter into a greased 7.5″ x 3.5″ Magic Line Loaf Pan
Bake at 350° for 30 minutes

Or
Pour the batter on to a cookie sheet (covered with parchment paper and roll it a flat as possible. Once done, cut into the size slices you want. 

Cool and serve
